 My hot sauce is made with only the finest fresh ingredients. With slight variations in ingredients and preparation methods, each batch is unique in flavor and heat profile so check out the batch details below. But one thing you can count on… Daddy Dundon’s Slightly Sour Sauce will always incorporate fermented chili peppers and other fruits and vegetables, resulting in a tangy hot sauce that has just the right amount of punch.

One note… the ongoing fermentation of this sauce in-bottle results in subtle changes over time. If it’s too spicy for you when you taste it initially, wait a few days and try it again to see if it’s mellowed out.

Keep refrigerated

Batch 1:

  • Ingredients: Habanero chilis, manzano chilis (that’s where the black seeds come from), carrot, garlic, salt, vinegar

  • Preparation: All ingredients except for the vinegar are fermented for seven days in a ~4% salt brine, which allows the naturally occurring lactobacillus bacteria to process the starches in the vegetables. This makes the veggies easier to digest and adds the tangy flavor. A bit of vinegar is added before bottling.

  • Heat level: Fairly spicy but approachable; mellowing out over time as fermentation continues in-bottle
